Potato and Cauliflower Tacos | Jess Ann Kirby


We make tacos at home at least once a week. Craig is the cook in the house and I know my strengths lol. One of the only things we don’t have near us is good Mexican food. It’s kind of hard to eat here in Vermont, so we make it a lot because we all love it, including our toddler. I’m mostly vegetarian, but the cool thing about this potato and cauliflower taco recipe is that you can add chicken, tofu, or beef.

This is a great weeknight meal that you can prep ahead and whip up in no time. Potato and Cauliflower Tacos

Ingredients (Tacos)

  • 1/2 head cauliflower
  • 10 fingerling potatoes
  • 1 bell pepper
  • 1 medium yellow onion
  • taco seasoning
  • Flour Tortillas
  • cheddar cheese
  • refried beans
  • 2 avocados
  • 1 fresh lime (store bought or try This salsa verde recipe!)
  • salt and pepper
  • chip (optional)

Ingredients Salad

  • green cabbage
  • radish
  • Primal Kitchen Oil and Vinegar Dressing
  • salt and pepper
  • lime juice

direction

  1. Preheat oven to 425
  2. Dice the potatoes, dice the cauliflower, thinly slice the onion (not too small or it will become mushy), slice the bell pepper
  3. Prepare refried beans and shredded cheese in an oven-safe pan
  4. Add avocado oil to a cast iron skillet and cook potatoes, cauliflower, onions at 425 degrees for 45 minutes (stirring halfway through)
  5. While the mashed potatoes are cooking, make a salad, thinly slice the cabbage and radishes, toss in the vinaigrette, and season with salt and pepper
  6. After 45 minutes add pepper, stir and season with more salt and pepper and cook for another 10-15 minutes
  7. Put the beans and shredded cheese in the oven at the same time and bake for 10 minutes
  8. To make guacamole, mash an avocado with salt and fresh lime juice (we like to use lemon juice too)
  9. When the potato mixture and beans are done, remove from the oven and place the tortillas on the oven rack. Turn off the oven and let it sit for a minute or two to heat up.
  10. Assemble tacos with beans, potato and cauliflower mix, guacamole, salsa and salad
  11. Optional, add your favorite hot sauce!
