- Broccoli and Cauliflower – Cut them into florets of even size so they cook evenly. You can even make roasted broccoli and cauliflower with frozen vegetables. I prefer fresh, but at certain times of the year this can be prohibitive due to cost, quality or both. I’ve done it both ways with good results.

How to Roast Broccoli and Cauliflower

- season. In a large bowl, drizzle broccoli and cauliflower florets with olive oil and toss. Stir in minced garlic and Parmesan cheese. Season with salt and pepper, then toss again to coat.

- Roasted vegetables. Spread the veggies in a single layer on a large pan, making sure there is enough room on the pan and it’s not crowded. Bake until edges are browned, tossing halfway through.
TIP: For best results, leave the pan unlined or lined with foil.
Parchment paper will do, but your veggies won’t brown either.


- Add more cheese. Stir in the remaining Parmesan cheese and season with salt and pepper.

Tips for the Best Oven Roasted Broccoli and Cauliflower
Generally speaking, the keys to perfectly roasting vegetables are using a lot of oil, arranging the small pieces in a thin layer on the baking sheet, and high heat. rnrnI named these steps “Three O’s” to help you remember. (I wanted something catchy like ABC, but obviously the letter O works better here!)
- Generous oil: Make sure the oil completely coats each floret in a thin layer. 1/3 cup of olive oil in this recipe might seem like a lot, but it really doesn’t take into account that it is divided into 8 cups of vegetables!
- Open space: I mean open space on the pan. Give your vegetables room to breathe! Make sure the florets are arranged in a single, even layer with no overlap and even allow some gaps between the pieces if possible. If you crowd the pot, you end up with steamed vegetables, which is totally different, no what do you want when you try bake your broccoli and cauliflower.
- Oven temperature: Using a high enough oven temperature is another important step in making sure the vegetables are actually roasting rather than steaming. Higher temperatures absorb moisture faster, and moisture equals steaming, not baking. Even up to 450 degrees is fine for some vegetables, especially harder ones like root vegetables. However, for this recipe for Roasted Broccoli and Cauliflower with Parmesan, I found 400 degrees to be hot enough to not burn the outside or scorch the parmesan too quickly.
Variety
This simple side dish can also be swapped out with different spices:
- Italian – Combine broccoli and cauliflower with 1-2 teaspoons of Italian seasoning before baking.
- Indians – use 1-2 teaspoons of indian seasoning before baking. This one omits the Parmesan cheese.
- pasture – Sprinkle 1-2 teaspoons over the vegetables ranch seasoning and Parmesan, either before or after cooking.
- lemon pepper – replace the salt and pepper with lemon pepper to taste(Alternatively, you can simply add lemon juice, lemon zest, or both.)
Storage Instructions
- Shop: Store leftover oven-roasted broccoli and cauliflower in the refrigerator for 3-4 days.
- How to Freeze Broccoli and Cauliflower: Freeze leftovers in an airtight container for 2-3 months. If you want to freeze veggies raw, it’s best to blanch them in boiling water for a few minutes first, which slows down the activity of enzymes and prevents a mushy texture after thawing.
- Reheat Instructions: For best results, reheat in a 350°F oven. You can also microwave it, but the vegetables will be more mushy.This Air fryer Also great for reheating for a nice texture.
