- grated Italian sausage – You can use pork sausage, turkey sausage, chicken sausage or breakfast sausage, but be sure to use raw, ground sausage.
- Egg – Whole large eggs. You can technically use egg whites too – the ratio is 2.5 egg whites for each whole egg.
- heavy cream – I love the rich flavor and texture of heavy cream, but you can use any milk here, e.g. almond milk, hemp milkcoconut milk, half and half, or regular milk.
- cheddar cheese – For convenience, use shredded cheese or shred your own. Feel free to substitute other cheeses, such as pepper jack or mozzarella.
- sea salt & Black pepper

How to Make Sausage Egg Muffins

- Brown sausage. In a large skillet over medium-high heat, cook the crumbled sausages until brown, breaking up with a spoon or spatula.
- Mix in egg mixture. In a large bowl, whisk together eggs, heavy cream, sea salt and black pepper. Stir in the cheddar cheese.


- Fill muffin cups. Line a muffin tin with parchment or silicone muffin liners (also sprayed with cooking spray if desired) and place sausages in muffin cups. Pour egg mixture over sausage.


- bake. Place sausage muffins in oven and bake until eggs are set. I like to garnish with a little fresh parsley.

Storage Instructions
- Shop: Store sausage egg cups in the refrigerator for 3-5 days.
- Meal preparation: Make these ahead of time and store in the refrigerator. They are great for meal prep breakfasts.
- Reheat: Warm sausage egg muffins in a 350°F oven or microwave. Be careful not to overheat or they will become dry and stretchy.
