A friend introduced me to Carney Salad At a Japanese restaurant many years ago.My options are usually limited because I avoid rice For a number of reasons and dislike the typical half wilted Japanese salad that is usually served. (Maybe I just had no luck getting fresh salads at these places?) Salads were great anyway, but unfortunately I later found out that imitation crab sticks were used in almost every place Spicy Carney Salad Recipe Gluten free and added sugar.So, I created this homebrew version real Crab meat – and it tastes good so much better!

What is Carney Salad?

Kani salad, sometimes called kanikama salad, is a Japanese crab salad made of crab meat (usually imitation crab), crunchy cucumbers and carrots, and a spicy mayo dressing.

Carney Salad Ingredients and Substitutes

This section explains how to choose the best toppings for a simple carney salad, what each ingredient does in the recipe, and substitution options. See recipe card below for measurements.

For salads:

  • crab meat – A traditional Japanese kani salad is made with imitation crab sticks (kanikama) made from starch and crushed cheap white fish, usually pollock. (This is called surimi.) Kanikama is also often used in sushi.You can still use imitation crab meat (cut into thin strips) if you want, but I think chunks of crab meat like this taste Very Better, healthier, and make the best kani salad recipe. You can use any crab meat, really, but the crab meat is the highest quality.
  • Kelp noodles – The traditional crab salad doesn’t use kelp noodles, but I think they are perfect. After all, kelp noodles are Japanese! Also, they make the whole salad both filling and light.
  • cucumbers and carrots – Slice cucumbers and carrots into thin slices.

For the Japanese mayonnaise sauce:

  • mayonnaise – This makes the dressing super creamy.you can make your own Homemade Mayonnaiseor others This is my favorite clean ingredient store-bought versionFor a more traditional option, you can substitute kewpie, a Japanese mayonnaise made with just oil, egg yolks, and vinegar.
  • lemon juice – Add soup and vitality. You can also use lime juice, or simply rice vinegar.
  • toasted sesame oil – This gives the salad a traditional Japanese flavor.
  • Sriracha – A must for kani salad dressing recipes. If you don’t like spice, you can add a little more seasoning.

How to Make Carney Salad

  1. Make dressings. In a small bowl, whisk together mayonnaise, lemon juice, toasted sesame oil, and sriracha. Chill in refrigerator.

If you have time, you can cool off for an hour or two, or even a few days in advance.

  1. Mixed salad. In a large bowl, toss the kelp noodles, cucumbers, carrots, and crab meat with the salad dressing. You can season with sea salt and black pepper if desired.

  1. decorate. Top Japanese Crab Salad with sesame seeds, roe (tobiko is most commonly found in kani salad recipes) and/or scallions (if desired).

Variety

You can customize this salad in two main ways:

in place of noodles

If you don’t have or like kelp noodles, you can also try these noodles:

add mango

Mango is a popular addition to these salads. Simply cut a ripe mango into thin strips and mix with the other kani salad ingredients.

Storage Instructions

This salad is best served fresh, but you can definitely make the dressing ahead of time (even better if you do!) and prepare the veggies and kelp noodles. When you’re ready to serve, throw everything together. Freezing is not recommended.
