We're always trying new things! However, this healthy grilled chicken with mango salsa recipe is always in our weekly rotation. Sweet and delicious, we simply couldn’t get enough.

The chicken is marinated in fresh mango puree and grilled to perfection. We then top it with homemade mango and strawberry salsa. It's easy to prepare, quick, easy, and totally delicious. Pair with your favorite side dishes For a crowd-pleasing meal!

How to cut a mango

There are many ways to cut a mango. Some people say to peel the mango first and then slice it.

However, we found that the easiest way to cut a mango is to cut off two pieces to create a flat side. Then, cut into pieces while the flesh is still in the skin, and scoop it out.

Alternatively, you can cut the mango in half. Then, using a similarly sized glass, scoop out a chunk of fruit. All that’s left to do is dice it!

  • mango: We use mangoes to create sweet marinades and salsas that inject fruity flavor into the entire meal.
  • Honey: This enhances the mango's natural sweetness without the need for refined sugar and creates a thick marinade consistency that helps it stick to the meat.
  • Coconut Amino Acids: Gluten-free soy sauce alternative that adds salty and umami flavor and helps tenderize chicken.
  • Lime juice: We use lime juice in marinades and salsas for a bright, citrus flavor. The acidity also keeps the chicken tender. Freshly squeezed is the best!
  • Salt and pepper: Adjust to taste.

How to Make the Best Strawberry Mango Salsa Chicken

  1. Puree the mango: Scoop out the pulp from half of the mango. Then, transfer it to a blender and blend until smooth.
  2. Make the marinade: Place the mango puree in a large bowl along with the honey, coconut aminos, and a tablespoon of lime juice. Add a generous pinch of salt and pepper and stir to combine.
  3. Marinated chicken: Place the chicken in a bowl, submerging it completely. Marinate in the refrigerator for at least 30 minutes or up to 8 hours. The longer you marinate, the more flavorful the chicken will be!
  4. Grilled: Heat grill to medium-high heat. Then, shake off any excess mango marinade from the chicken. Place the protein on the grill and cook, turning halfway through. use a meat thermometer Make sure the chicken's internal temperature reaches 165 degrees Fahrenheit.
  5. Prepare the salsa: Cut the remaining mango in half. Then, add it to the bowl along with the strawberries, red onion, cilantro, and remaining lime juice. Season with salt and pepper.
  6. Serve: Spread the salsa over the chicken and enjoy!

Use baking pan

We highly recommend cooking this recipe on an outdoor grill if you can. Since the chicken contains a sweet mango marinade, cooking it on a grill with more air circulation will allow for even cooking. It also reduces the likelihood of the chicken burning.

However, if an outdoor grill is not an option, use Baking pan Also works! Heat on the stove and cook the chicken as normal. Be sure to shake off any excess marinade as much as possible, as it can easily burn before the chicken is cooked.

  • Meanwhile, make the salsa: dice the remaining mango half. Add mango, strawberries, red onion, cilantro, remaining lime juice, and a pinch of salt and pepper to the bowl.

  • Spread the salsa over the chicken and enjoy!

Slice the chicken breasts in half crosswise to make the chicken breasts thinner, which almost cuts the cooking time in half!
