- olive oil – For stir-frying. You can also use avocado oil, coconut oil, or any heat-resistant cooking oil you like.

- Egg – Use full, large ones.

How to Make Sweet Potato Hash

- Cook the bacon. heat up a chunk cast iron skillet Heat over medium heat. Add bacon slices and cook until crisp. Transfer to paper towels to drain excess grease. Cut into chunks and set aside.


- Cook the sweet potatoes. Remove excess fat from skillet. Add olive oil and heat over medium-high heat. Add sweet potatoes and cook until slightly softened and light brown.
- Cook the vegetables. Add diced green peppers, diced onion, garlic, sea salt, and black pepper to skillet. Cook the mashed sweet potatoes until the peppers are tender, the onions are translucent, and the sweet potatoes are soft and cooked through. (You may need to reduce heat to medium if browning too much.)


- Add bacon. Stir it until smooth.
- Add eggs and bake. Make 4 wells in the sweet potato breakfast hash and crack an egg into each hole. Transfer to the oven and cook until the eggs are to your desired doneness. I like to garnish with fresh parsley, but this is optional.

- southwest – Add diced green chilies and corn kernels when adding onions. When you add the cooked bacon, add the rinsed and drained black beans.Substitute 1-2 tbsp for smoked paprika and cumin taco seasoning or Fajita Seasoning.
- cheesy – Sprinkle cheddar, Monterey Jack, or feta cheese over sweet potato breakfast hash before popping in the oven.

- sausage – Use breakfast sausage instead of bacon. (Cook on medium heat for about 10 minutes at first.)

Preheat oven to 400°F (204°C).

Add red pepper, onion, garlic, sea salt, and black pepper to skillet.Cook 6-7 minutesuntil the peppers are tender, the onions are translucent, and the sweet potatoes are soft and cooked through.

Punch 4 holes in the hash. Crack an egg into each well.Transfer the hash to the oven to cook 5-7 minutesor until eggs are cooked to your desired doneness.
