There are many ways to make a steak marinade, but this easy balsamic version is my favorite. Ingredients and Substitutes

- coconut aminos or soy sauce – Adds umami and balances the acidity of the vinegar.Coconut aminos are my favorite soy sauce substitutebut you can use regular or low-sodium soy sauce if it suits your lifestyle.
- olive oil – Oil is essential to lock in moisture. Avocado oil would work too, or use any neutral oil you like.
- balsamic vinegar – Acidic ingredients are the key to a steak marinade because they tenderize the meat. I like the slightly sweetness of the balsamic, but you can also try using red wine vinegar, lemon juice, lime juice, or apple cider vinegar. If you’re using something that’s not sweet at all, add a few tablespoons of Worcestershire sauce to balance out the flavors.
- italian seasoning – I use my own Homemade Italian Seasoning (just 5 minutes), but you can use store-bought ones. You can also substitute dried herbs alone, such as rosemary, thyme, oregano, parsley, or basil.
- spices – you will need garlic powder, Sea Salt And Black Pepper. If you have fresh garlic, you can use 2 (or more!) fresh minced cloves in place of the garlic powder in the steak marinade. You can also add 1/2 teaspoon of onion powder if you like.

How to Marinate Steak

- Stir together the steak marinade. Combine all ingredients in a small bowl with a mixer.
- Marinate the steak. Pour the marinade into a gallon ziplock bag (alternatively, you can use a larger bowl and marinate directly in it). Add the steaks, seal the bags, and move them to coat well. Marinate in the refrigerator.

Tips for the Best Steak Marinade
While steak marinade recipes are super easy to make, I have a few suggestions for juicy steaks:
- Steak marinades should always contain oil, an acidic ingredient (such as lemon juice or vinegar), seasonings, and salt. Salt and acid are key to tenderizing meat, oil to lock in moisture, and seasonings to add flavor. Check out more steak marinade recipe ideas using these ingredients below!
- The best marinating time is 3 to 12 hours. This allows enough time for the flavors and acids in the marinade to penetrate the surface of the meat and tenderize it without ruining the texture too much. Marinating for longer than 24 hours may result in a mushy texture.
- Refrigerate while marinating. For food safety, keep steaks in the refrigerator while they are marinating.
- Bring steaks to room temperature before cooking. Bringing steaks to room temperature before cooking will allow them to cook more evenly and help prevent overcooking. The center of cold meat takes longer to cook, which can result in uneven doneness and a dry exterior.
- Do not freeze steak in the marinade. Even if frozen, leaving a steak in a marinade for more than 24 hours can turn it mushy.

- chimichurri sauce – For Argentinian steak marinade, use 1/3 to 1/2 cup Argentinian Chili Sauce steak per pound.
