This classic arugula salad calls for 3 simple ingredients, but it’s easy to add other tasty additions. (See variants below!) Here’s what you need for the basic version:
- arugula – You can use baby arugula or regular arugula leaves. The same recipe works with baby spinach, mixed greens, and even kale.
- pine nuts – As an alternative to toasted or raw pine nuts, you can try walnuts, almonds, pecans or sunflower seeds for crisping.
- Shaved head parmesan cheese – This dish can also be served with shredded feta, grated Romano or creamy goat cheese.
Arugula Salad Dressing:
Passionate lemon vinaigrette Adds a bright flavor to salads. Here’s what I used to make it:
- Extra virgin olive oil – You can also use avocado oil, or your favorite neutral salad oil.
- lemon juice – For best flavor, use fresh lemon juice. You can also substitute other acids, such as balsamic vinegar.
- dijon mustard – You can use yellow mustard, whole grain mustard, or spicy brown mustard to bring a different flavor to the dressing.
- italian seasoning – make Homemade Italian Seasoning Just 5 minutes, or use a store-bought mix.
- garlic powder – Subtle garlic flavor.
- sea salt and black pepper – Kosher salt can also be substituted for sea salt.
Variations: Make a Sweet Dressing!
If you want some sweetness, add 1-2 teaspoons of honey (or even maple syrup). (You can also use Zero Sugar Honeyif you want a Sugar Free Salad Dressing Still very sweet. )

How to Make Arugula Salad

- Make the dressing. In a small bowl, combine the arugula dressing ingredients. Stir until emulsified. (You can also shake up the dressing in a glass jar if you’re making extra for later.)
- Prepare the salad. Place the arugula in a large bowl. Stir in pine nuts and Parmesan.


- Throw together. Drizzle vinaigrette over top, and toss until arugula is well coated. Serve immediately.

storage instructions
If you have leftover savory salad, store the vegetables in an airtight container separate from the dressing and refrigerate for up to 2-3 days. Dressing will keep in the refrigerator for 1-2 weeks in glass jars. Add seasoning just before serving. (Salads that already have a dressing don’t keep well because the arugula gets soggy.)
