As summer heat looms, our palettes naturally start to crave fresh, crisp veggies and the goodness of healthy, mind-nourishing plant-based meals. We recently planted a vegetable garden full of tomatoes, peppers, broccoli, squash, zucchini, cucumbers, lettuce and fresh herbs, and it’s exciting to see them grow and enjoy each season’s harvest. There is nothing better than enjoying the fruits of your labor, fresh out of your garden and on your plate.
Today I’ve rounded up some great vegetarian recipes to help you bring inspiration into your kitchen and bring all the goodness into your mouth. Even if you’re not a vegan (like me) these recipes are so delicious that your carnivore won’t even know what you’re missing!
