After a recent study showed that Filipinos actually consume less than 50% of their daily fiber requirements, the campaign aims to raise awareness among Filipinos about eating fiber-rich foods, meaning your current diet may not Enough as you can imagine!

According to the Philippine Society of Nutritionists (PSND), a study of working Filipino adults reported an average daily consumption of only nearly 8 grams of fiber. “This is a far cry from the Recommended Nutrient Intake (RNI) of 20 to 25 grams,” shared Jake Brandon Andal, PSND registered dietitian and dietitian.

This low fiber intake means Filipinos are missing out on an important nutrient that helps aid digestion, prevent constipation and maintain good digestive health. It also helps with weight control and reduces the risk of heart disease.

Quaker Oats recently hosted the Quaker Kitchen Cook-Off, where brand ambassadors Luis Manzano and Solenn Heussaff challenged each other to use Quaker Oats to prepare easy, delicious and nutritious recipes.

During the Quaker Kitchen Cook-Off event (also broadcast via Quaker Philippines’ Facebook page), both health lovers shared their favorite fruity and delicious desserts such as Rainbow Superfloat, Caramelized Banana No Bake Cheesecake and Homemade ice cream.

Luis and Solenn created these fun recipes with Quaker Oats and shared their tips for adding fiber to your diet and maintaining a healthy lifestyle with a professional nutritionist without cutting out snacks entirely.

“I love Quaker oats and have been a staple at Manzano’s since I was a kid. My favorite recipe is definitely overnight oats because it’s quick and easy, but I’ve been improving my cooking skills lately! So Now, the Rainbow Superfloat recipe is a new favorite. If you’re looking for a more fruity and colorful breakfast or a healthy, light and refreshing dessert, this is a great choice!” Louis shared on the show.

here are 3 Quaker Kitchen Cooking Dishes you should try at home:

Rainbow Super Float

Recipe serves 2 glasses or jars

raw material:
¼ cup Quaker Oatmeal
250g or 2 cans yogurt (0% fat or any other type of yogurt)
3-4 tablespoons cocoa sugar
2 Calamansi fruits (for zest)
1 kiwi
1 mango
1⁄2 pineapple
1/4 pink dragon fruit
¼ cup strawberries
¼ cup fresh or frozen blueberries (¼ cup)

Note: All fruits can be substituted according to your sweetness preference, as long as the fruits are colorful to create a rainbow effect!

Prepare the Calamansi Yogurt Base:
Mix together yogurt, coconut sugar and squid skin. (Tip: To remove the zest from citrus, you can use a cheese grater!)

To prepare the fruit:
Wash all fruit, then peel and cut dragon fruit, pineapple, kiwi and mango into 2 cm cubes.
Divide the strawberries in half. For blueberries, keep them intact.
Put each fruit in a separate container.

Assemble the dessert:
Start by spooning in the Calamansi yogurt, then add a thick layer of Quaker Oatmeal.
Add multiple layers of fruit to create a rainbow effect.
Store it in the fridge and eat it cold!

Caramelized Banana No Bake Cheesecake

Recipe serves one 7-inch cake

raw material:

oat husk
1 cup shredded Quaker Oatmeal
¼ cup light brown sugar
¼ cup margarine
2 tablespoons all-purpose flour
1 pinch salt

Caramel Bananas
2 sweet bananas
3 tablespoons light brown sugar
2 tablespoons margarine

Cream Cheese Batter
2 cups cream cheese
1 can condensed milk
¼ cup fresh lemon juice
1 tablespoon vanilla

NOTE: You can also decorate your cheesecake with berries, fruit or even chocolate chips!

To make the caramelized bananas:
In a pot, pour in the light brown sugar and caramelize it.
Mash the bananas with a fork.
Add the bananas to the light brown caramel and add the margarine
Cook until the caramel is completely dissolved in the mashed banana.
Keep these in the refrigerator.

To make the oatmeal:
In a bowl, combine all ingredients with melted margarine.
Use a spoon to press the crust into a *7″ mold (bottom only)
*Options: If you don’t have pastry rings, you can use glass, aluminum trays or ramekins
Chill for at least an hour before adding the filling

To make the cream cheese batter:
Squeeze lemons for fresh lemon juice
In a bowl, mix all ingredients together until you get a smooth and lump-free consistency
Pour this mixture over your oat husks and chill for at least 5 hours
Spread the caramelized banana jam with a spoon.
Garnish with oats and fresh bananas. Likewise, you can decorate your cheesecake with berries or fruit or even chocolate chips!

Quaker Kitchen Cooking

Homemade Sorbet

Recipe serves 4 sorbet bars

raw material:
½ cup Quaker Oatmeal
1.5 cups yogurt or whipped cream
1/3 cup light brown sugar
75 g canned peaches
optional: 1 teaspoon cinnamon

Note: All fruits can be fresh/canned/frozen

To make ice cream:
Using a spoon and saucepan, melt the brown sugar into the cream or yogurt (lighter version). Set it aside.
Wash, peel and cut the fruit into large pieces.
Add fruit and oats to sweet mixture, then pour carefully into sorbet molds
Put it in the refrigerator for at least 24 hours.
Remove sorbet from molds and eat frozen!
