Canned Italian Zucchini and Tomatoes


I’ve had a garden for years and for some reason my zucchini and tomatoes are growing faster than anything else, so I have a great recipe to share with gardeners who want to eat zucchini all winter long!

Ingredients

  • 2 quarts peeled and chopped tomatoes
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup chopped bell peppers (green, yellow, or orange)
  • 1 head garlic washed and chopped
  • 1/4 cup chopped parsley
  • 1/4 cup chopped fresh basil.
  • 1/8 cup chopped fresh oregano
  • 1/4 teaspoon chili flakes (optional)

Cut by hand or put in an electric chopper, if you use a food processor make sure you chop it up, it’s important for the texture of the final product.
You can use dried herbs if you like, this recipe is an Italian dish with 1/8 cup cilantro and 2-3 green chiles (chopped) and chili flakes for zucchini

Bringing the ingredients above to a boil and processing now makes a great canned tomato recipe, but that’s where I go ahead and add the zucchini.

In each jar, I personally add 1 tablespoon lemon juice and 1 teaspoon jar salt, or 1/2 tablespoon lemon juice and 1/2 teaspoon per quart. Pack salt per pint. This is your preservative, lemon for color and acidity, and salt for preservation and flavor.

Canned Zucchini with Stewed Tomatoes

Add to:
Add 12 cups chopped zucchini and/or zucchini (including skins)
Boil and simmer for 6-8 minutes. until barely cooked. The zucchini will continue to cook during the canning process, so you don’t overcook it! !

These must be added:
Quart – Add 2 tablespoons lemon juice and 1 teaspoon. Salt in each jar, lemon juice for acid balance, salt is for preservation.Always use clean rims, add heat seal

Process in a 10# pressure pot for 30-35 minutes per manufacturer’s instructions.

Pint – Add 1 tsp lemon juice and 1/2 tsp.Salt

The flavor will intensify during heating, so less is better. always Reheat home processed foods before serving and add spices if necessary!
