Ingredients and Substitutes

This section explains how to choose the best ingredients for avocado egg salad, what each ingredient does in the recipe, and substitution options. See recipe card below for measurements.

  • avocado – To make egg salad without mayo, we use avocado as a mayo substitute. Make sure they are ripe so they mash nicely to a creamy consistency.
  • lime juice – Prevents avocados from browning and adds rich flavor. Fresh tastes best, but bottled lime juice is fine for convenience. In a pinch, lemon juice can also be used as a substitute.
  • sea salt – Adjust to taste.
  • fresh coriander – Fresh herbs work best in salads, but you can technically use 1 tablespoon + 1 teaspoon dried cilantro instead of 1/4 cup fresh. If you’re not a cilantro fan, scallions, chives, or even dill or parsley will do.
  • red onion – They add crunch and flavor! Red onions are a classic accompaniment to other flavors in this avocado egg salad, but white onions or even scallions will work if you have them on hand. Either way, chop so they blend well.
  • celery – Another component that adds crunch. Diced is also good.
  • black pepper – For a little heat! Remove the ribs and seeds to cut down on calories and leave them in if you like spice.
  • fully boiled egg – Feel free to boil them, but you usually do. This is my favorite way to peel hard boiled eggsbut you can also use Boil eggs in the oven if you prefer.

Will Avocado Egg Salad Brown?

Yes, if you make egg salad with avocado instead of mayo, the avocado will brown (like guacamole) after a day or two. While it may not look as appealing, it is safe to eat. A lot of times it’s just the top layer that’s brown, so you can take that off, or mix it up and it’ll turn green again.

How long will avocado egg salad last?

Avocado Egg Salad will keep for 1-2 days in an airtight container in the refrigerator.

Can you freeze egg salad with avocado?

No, I don’t recommend freezing avocado egg salad. Hard-boiled eggs can have a weird texture when frozen and avocados can turn brown.

No avocado mayo salad in the bowl.
