  • drumstick – For this recipe, you will need skin-on bone-in chicken thighs.You can also use the same method to make bone-in chicken thighs or chicken thigh quarters (Grilling times will vary). For skinless white meats like chicken breasts (coming soon!), you need to take a different approach.

How to Roast Chicken Thighs

  1. Prepare. Clean the grill grates with an oiled paper towel. Preheat grill to medium-high heat. Pat the chicken thighs dry with paper towels.

Bake the chicken thighs on direct heat for about 25 minutes, or for a crispy skin, roast them on indirect heat for 30-40 minutes. For the juiciest results, the internal temperature of the drumsticks on the grill should reach 170 degrees Fahrenheit.

Whether you roast chicken thighs using the quick or slow method, these tips will help you get perfectly juicy meat and a crispy crust.

  • Start with a clean grill. Clean the grates with an oiled paper towel beforehand. Doing this will prevent sticking.
  • Preheat grill. Preheating the grill to medium-high heat will also prevent sticking and ensure even cooking.
  • Grill display side down first. Grill the drumsticks skin-side first for the prettiest grill marks.
  • Keep lid closed. Roasting chicken with a lid on helps retain heat, promotes even cooking, and infuses smoky flavor by trapping and circulating smoke within the grill.
  • For a crispy crust, cook over indirect heat. Slow cooking hardens the fat and makes the skin crispy. But if you want to cook them faster, you can just heat them.
  • Sticking troubleshooting methods: If the chicken sticks, either the grill isn’t hot enough or the chicken needs to cook longer before flipping.
  • How to avoid outbreaks: If the fat drips down and catches fire, move the chicken to another location immediately. Sudden fire can cause excessive charring of the chicken, affecting the flavor.
  • use one meat thermometer. This is the best way to make sure your chicken is cooked perfectly! While 165°F is safe, I highly recommend roasting chicken thighs to 170°F for juicy results. (This is always my recommended temperature for dark meat to make it juicier; the opposite for white meat.)
  • Rest uncovered. Covering creates a steam effect that softens the skin and makes it less brittle.

  6. Remove the grilled chicken legs from the heat and let it rest, uncovered, for 5-10 minutes before serving.
