Ingredients and Substitutes
This section explains how to choose the best ingredients for grilling chicken thighs in the oven or grill, the role each ingredient plays in the recipe, and substitution options. For measurements, see recipe card below.
- chicken – I use drumsticks for this BBQ drumstick recipe, but chicken thigh quarters or whole chicken wings will also work, or you can Roast Chicken Legs, also. I recommend bone-in, skin-on meat for juicy, flavorful results, but you could technically use the same method with boneless skinless chicken breasts or thighs.
- olive oil – Adds flavor and helps seasonings stick. Avocado oil works too.
- sea salt and black pepper – I keep it simple with just salt and pepper, since the BBQ sauce provides plenty of flavor. However, you can add other spices to the chicken first, such as paprika or garlic powder, if you wish.
- barbecue sauce – pick your favorite, because this is the star of the dish!I use my homemade Sugar Free BBQ Sauce (made with ketchup, apple cider vinegar, bestie powder, Worcestershire sauce, smoked liquid, paprika, garlic powder, onion powder, salt, paprika and cayenne pepper). However, you can use any type you like.

How to Make BBQ Chicken Thighs
This section shows how to make BBQ chicken thighs in the oven or on the grill, with step-by-step photos and details about the technique to help you get a feel for it.For full instructions, including amounts and temperatures, see recipe card below.
Prepare:
Whether you’re grilling or grilling BBQ chicken thighs, the simple preparation is the same:
- dry. Blot chicken dry with paper towels. (This helps the seasoning stick and makes the skin crispier.)
- season. Brush olive oil on all sides of chicken. Season all sides with salt and pepper.

To grill chicken thighs in the oven:
Honestly, I cook grilled BBQ chicken most often because it’s so hands-off! Use this method when the temperature is not too hot to turn on the oven:
- bake. Preheat oven. Place the chicken thighs on the skillet. Bake until almost done.
- brush. Remove the chicken from the oven and brush the chicken with BBQ sauce.
- Finish. Continue cooking Roasted BBQ Chicken Thighs until done. Bake them for a few minutes if you want them to be more caramelized.

BBQ Chicken Thighs on the Grill:
In the hot summer, you can never go wrong with a BBQ chicken! This approach is less convenient, but still simple:
- chef. Preheat grill to medium-high heat. Place the seasoned chicken thighs on the grill, meat side down, and cover over direct heat.
- flip. Turn the drumsticks and cook the other side.
- brush. Close one side of the grill. Remove chicken legs from lighted burner over indirect heat. Brush BBQ sauce over chicken, cover, and cook.
- flip. Turn legs and smear with more BBQ sauce. Roast until caramelized and cooked through.

Tip: For juicy results, cook the internal temperature to 170°F.
If you cook darker meats, such as chicken thighs or thighs, to 170°F (instead of the safe 165°F), the results will be more tender. If you are making this recipe with chicken breasts, choose 165°F. Check with a meat thermometer (i like this oneread quickly to avoid overcooking).
