Chimichurri sauce is a South American condiment originating in Argentina and Uruguay made with fresh herbs, garlic, oregano and olive oil. It is traditionally served with roast meat, but can also be enjoyed with other dishes.

Ingredients and Substitutes

- Extra virgin olive oil – I’m using extra virgin olive oil here, but any regular olive oil will do.
- white wine vinegar – Some chimichurri recipes use white wine vinegar while others use red wine vinegar. You can use either one. You can also use lemon juice.
- fresh parsley – Use fresh parsley (dried parsley is not recommended here). If your parsley is particularly dark and ripe, it may be more bitter than younger parsley. Some versions of this sauce also include cilantro, so you can substitute that for some parsley if you like that flavor.
- garlic – For best taste, I recommend using freshly minced garlic, but you can use 2 tsp canned garlic For convenience. For a more aromatic flavor, you can also add chopped red onion, although it’s not authentic.
- dried oregano – Dried oregano elevates the flavors, providing a subtle but distinct earthy warmth. You can also use fresh oregano (triple the amount) if you like.
- sea salt
- crushed red pepper – Red pepper flakes make this chimichurri sauce recipe spicy. I recommend starting with a little and adjusting to taste.

Variation: Make red sauce!
The less common rojo (red) variant wouldn’t be considered an authentic chimichurri sauce, but it’s still delicious. Just add a few tablespoons of diced fresh tomatoes and red bell peppers.

This chimichurri sauce recipe is super easy!The easiest way is to chop the parsley and mix all the ingredients together glass jar and shake it. You can also whisk in a small bowl if you prefer.
Season with more salt and crushed red pepper, if desired.
Tip: For faster preparation, use a food processor.
You don’t need to chop ingredients by hand, just add them to food processor instead. Just be sure not to over process it so the sauce retains some texture.

storage instructions
Store this chimichurri recipe in an airtight container in the refrigerator (such as glass bottle). It will keep for at least a week, sometimes even two weeks.
The sauce starts out a brighter green and darkens over time, but that doesn’t really matter.
Can you freeze Chimichurri Sauce?
Yes, you can freeze chimichurri sauce. The easiest way to freeze it is to pour it into ice cube trays and place in the freezer. Once firm, you can transfer them to freezer bags if desired.
When you want to use it for steak night, thaw the cubes as needed.
