  • chicken breast – I prefer to use organic chicken (You can have it delivered to your door), but any boneless and skinless chicken breast will do. You can also use boneless skinless chicken thighs if you prefer.
  • sea ​​salt and black pepper
  • olive oil – For fried chicken. Avocado oil is also a good choice. If you don’t turn the heat too high, you can substitute butter for the flavor so it doesn’t burn.
  • chicken soup – I like to use Organic Chicken Soup, but any chicken stock (even beef or vegetable stock) will do. You can also use low sodium if you want to reduce your sodium intake. bone broth Also great for extra nutrition.
  • arrowroot powder – this helps thicken the sauce without any flour making it a great cornstarch substitute. I don’t use white flour in my recipe, but this would also work as a 1:1 substitute. If you want to avoid starch altogether, you can substitute 1/4 to 1/2 teaspoon of xanthan gum.
  • garlic – For convenience, use fresh garlic cloves or canned garlic.
  • cream – Heavy cream will have the richest flavor, but for paleo, dairy-free, and Whole30 options, use coconut cream. In fact, I originally used coconut cream for this recipe, but I now prefer heavy cream for the flavor.
  • sun dried tomatoes – you can do it yourself Homemade Sun Dried Tomatoes, or buy them. If they are packed in oil, drain them before use. It is best to use julienned (thinly sliced) tomatoes in this recipe, many store-bought brands are already sold shredded this way, but if not, shred them.
  • fresh basil – Fresh basil adds an amazing bright flavor, but if it’s unavailable or out of season, you can omit it or substitute some spinach for the color.

How to Make Sun Dried Tomato Chicken

  • Seasoned chicken. Pat the chicken breast dry with paper towels. Season with sea salt and black pepper.
  • Roast chicken. Heat oil in a large saucepan over medium-high heat. Fry the chicken breasts for about 8 minutes per side, until golden brown and almost fully cooked. Remove from pan and cover with aluminum foil to keep warm.

  • Mix to thicken mixture. In a small bowl, whisk arrowroot powder into chicken stock.

tip: Avoid clumping. Make sure to stir it thoroughly in the broth before adding it to the pot.

  • Make sun-dried tomato paste. Add garlic to frying pan and cook until fragrant. Add the broth mixture, cream, sun-dried tomatoes and half of the basil. Bring to a boil, then reduce heat until thickened.

  • Finish cooking. Return the chicken to the pot and spoon over the sauce. Cook for another minute or two, until the internal temperature reaches 165 degrees Fahrenheit.
  • Decorate. Sprinkle with more fresh basil before serving. You can also season with red pepper flakes and parmesan if you want to add a little more flavor.

Storage Instructions

  • Shop: Place chicken in an airtight container and refrigerate for 3-4 days.
  • Reheat: Reheat chicken in microwave or hot skillet until heated through, being careful not to overcook.

  7. Return the chicken to the pot and put the sauce on top.Cook 1-2 minutes, until the chicken is fully cooked (internal temperature reaches 165°F).

  8. Top with remaining fresh basil before serving.
