long time no post Slow Cooker Recipes, time to bring it back with these slow cooker sausages and peppers.because i’m a huge fan italian food – It’s fresh and comfortable, yet easy to be healthy – that’s my spin here.I use a similar flavor in one of my super easy sausage sheet pan meals easy keto recipesand also.

What is Italian sausage and peppers?
This Italian sausage and peppers recipe combines slow-cooked bell peppers, onions, pepperoni, and marinara sauce. It all cooks together for an incredibly delicious meal. The slow cooker does what it does best: makes everything super juicy and tender!

- olive oil – For sauteing sausages before slow cooking. If you’re really in a hurry, you can skip the browning, but I promise it’s worth it if you can brown the sausage first. It only takes a few minutes and adds a lot of flavor. Any other cooking oil, such as avocado oil, can be used here.
- sausage – I used mildly spicy pork salami, but any sausage will do, including sweet pepperoni, turkey sausage, kielbasa, or bratwurst.
- Bell peppers – Cut them into strips as you want Fajita. I used one each of orange, yellow, and red bell peppers, but any color you like is great.
- onion – This Crock Pot recipe for Italian Sausage, Peppers and Onions works with any type of onion. I used white onions in this recipe, but feel free to use what you have on hand – red, white or yellow. Cut the onion into half-moons, the same width as the pepper strips.
- garlic – Chop fresh garlic cloves for best flavor, or use canned garlic For convenience.
- Italian seasoning – I used my 5 minutes Homemade Italian Seasoning, which is a combination of dried oregano, basil, marjoram, thyme, rosemary and sage. Store-bought will work just fine, though. If you like heat, add a little red pepper flakes to the seasoning.
- sea salt & Black pepper
- Italian Tomato Sauce – i used Homemade marinara, is quick and easy to make, but store bought works great. You can also substitute crushed tomatoes or ketchup, but salt or seasoning may need to be adjusted.
How to Make Sausage and Chili in a Crock Pot

- Brown Italian Sausage. Add olive oil to frying pan and brown sausage on each side until browned.
FYI: The sausages here don’t need to be fully cooked.
We just brown them in this step to lock in the flavor.
- Slice vegetables and place in slow cooker. Stir together bell peppers, onion, garlic and Italian seasoning.


- Add marinara and sausage. fall Marinara on the veggies, then put the sausage on top.
- Slow cooker. cook in it slow cooker A few hours, until the sausage is cooked through and the peppers and onions are tender.

Can you cook sausage and peppers in the oven?
Yes, you can make grilled sausage and peppers. Once the sausages are browned, place the ingredients in a roasting pan (same as the slow cooker version) and bake at 400°F for 20-30 minutes, until the peppers are tender.
Storage Instructions
- Shop: If you have leftovers, store them in the refrigerator for 3-4 days.
- Meal preparation: You can easily make this dish a day or two ahead. You can also have peppers and onions on hand so they’re ready and then you can toss everything in the slow cooker the same day.
- Reheat: Reheat in the microwave, or add a little water or chicken stock to a hot pot with a lid until heated through. You can also reheat sausage and peppers in a crock pot.
Can you freeze sausages and peppers?
Yes, you can freeze salami and peppers for 2-3 months. Let them thaw overnight in the refrigerator before reheating.
