I’m pretty sure nature has forgotten what season it is. It’s April and here we are, the day after a whirling snowstorm. sigh. At least it’s the perfect excuse to whip up my low-carb taco soup recipe and ranch dressing. When I want comfort food in hot bowl soup form, this tomato taco soup is my go-to.

Basic Low Carb Taco Soup Ingredients

I’m sure there are many variations on this simple taco soup. My version only calls for five ingredients, so yay!

Here’s all you need for this easy tomato taco soup recipe:

Now, don’t yell at me for the fact that two of those ingredients are taco seasoning and ranch dressing. Yes, I realize that each of these has multiple ingredients in itself.

However, both are staples that you can make ahead and use in a variety of ways. It’s not like you have to make low carb taco soup every time you want it. At worst, they each take about 5 minutes to throw together (just mix!).

There are tons of options to customize your low carb taco soup.

Types of Broth

Let’s start with bone broth. I use beef bone broth to go with the ground beef in the soup and get the collagen benefits from it.

However, feel free to use regular beef broth if you prefer. Even chicken stock will do if you have it.

Tomatoes Make the Best Keto Taco Soup

Next, diced tomatoes! I used regular, but I bet fire roasted tomatoes would be delicious too.

If you want to add an extra kick to your Paleo Taco Soup, there are a few options. Try diced tomatoes with green chilies for another option. Or if you have a jar of salsa, that’s another great idea!

Tomatoes are slightly higher in carbs than some other vegetables, but still fit well in tomato taco soup.

Easy Taco Soup Ingredients

What Toppings to Put on Taco Soup? I love shredded cheddar (omit for paleo taco soup) and cilantro. Avocados are also delicious. Feel free to add whatever you put on your tacos!

Taco Seasoning and Ranch Dressing

As mentioned, I used my favorite homemade taco seasoning and ranch dressing in this recipe. But, you don’t have to! If you’d rather use the store-bought variety, feel free. Any kind will do.

You can even add them for flavor if you want to adjust the heat or creaminess. There is a lot of flexibility here.

Dairy-Free, Paleo, or Whole30 Taco Soup

What if you want dairy-free whole30 soup or paleo taco soup? It’s easy to do. Just use a ranch dressing that fits those dietary restrictions. .

Of course, you can also skip the cheese topping in this case. You can still add other delicious toppings like avocado and cilantro.

How to Make Taco Soup on the Stove

As with any low carb soup recipe, I am hesitant about choosing a cooking method. Tomato Taco Soup on the Stove, Slow Cooker, or Pressure Cooker?

Ultimately, I chose the stove for simplicity.I did the same for mine Easy Broccoli Cheese Soupwhich is a huge reader favorite, so I don’t think you can go wrong there.

So, how do you make taco soup on the stove? All you need is one pot and 20 minutes.

Here’s how to make keto taco soup:

  • Place the ground beef in the bottom of a large pot over medium heat. It takes about 7-10 minutes. You can drain it afterward if you want, but it’s not required.
  • Add 2 tbsp taco seasoning and some broth, then simmer until mostly absorbed into the meat. This essentially turns the meat into taco meat.
  • Add more broth, diced tomatoes, and more taco seasoning. Simmer for another ten minutes or so, maybe even a little less. Remove from heat and wait a few minutes.
  • Add ranch dressing. The reason we wait a few minutes first is to avoid the dressing from setting.

How to Make Taco Soup in the Crock Pot or Instant Pot

If you want to make Crock Pot Low Carb Taco Soup, or if you prefer Instant Pot, you can.

  • For crock: Sear the meat just like the stovetop method and finish in the slow cooker.
  • For the Instant Pot: You can do the whole process in a pressure cooker. Either way, make sure to add the ranch dressing at the very end, no heat.

  1. at the bottom cauldron Over medium-high heat, sear the ground beef for approx. 7-10 minutes, until it is no longer pink. Drain if needed.

  2. Add 2 tablespoons (28 g) taco seasoning (2/3 of total) and 3/4 cup (177 ml) broth. Simmer for a few minutes until the liquid is mostly gone.

  3. Add remaining broth, diced tomatoes (with liquid), and remaining tablespoon taco seasoning. Stir together.Simmer for approx. 8-10 minutes.

  4. Keep away from heat sources.wait 2 minutes, then stir in the ranch dressing. Garnish with shredded cheddar cheese and cilantro, if desired.
