Cooking time for asparagus in the oven varies depending on the temperature and size of the asparagus, but use this chart as a good rule of thumb:

Do you have to peel asparagus?

you should not peel asparagus. However, you do want to trim the ends of the asparagus stems as it is very tough, woody and inedible. You can break it off by hand, cut it with a chef’s knife or peel it with a vegetable peeler.

Some recipes call for the asparagus to be peeled if it is part of a salad or a topping on a pizza. Switching cooking techniques is a great option, but in this roasted asparagus recipe, we leave out the skins.
