Despite having slightly more than 10 ingredients, this dish is still simple enough to include on my 10 or Fewer Ingredients website. It’s so nice not to share – and it’s still so easy! The dressing and salad each contain fewer than 10 ingredients and are ready in less than 30 minutes.
Roasted Red Pepper Dip:
- Roasted Red Peppers – be my sweet Roasted Red Peppers Use red bell peppers and olive oil at home, or use store bought For convenience.
- olive oil – You can also use extra virgin olive oil, avocado oil or a neutral oil.
- balsamic vinegar – The quality of the vinegar will affect the flavor of the sauce. this The one from Modena, Italy is my favourite. You can also substitute other acidic ingredients, such as apple cider vinegar or lemon juice.
- Honey – I prefer to use unsweetened honey, but either will work. If you don’t have honey, maple syrup is a great substitute.
- garlic – use fresh minced garlic for best flavor or 1 tsp canned minced garlic To save time. You can also substitute 1/4 teaspoon of garlic powder.
- italian seasoning – use a store bought mix or let me hurry up Homemade Italian Seasoning Just 5 minutes.
- sea salt & Black pepper
Goat Cheese Salad:
- chicken – I used boneless skinless chicken breasts, but you can also substitute boneless skinless chicken thighs or tenderloin.Alternatively, use the remaining Grilled Chicken Breast or Instant Pot Shredded Chicken.
- sea salt and black pepper
- olive oil
- Green vegetables – I used a spring mix as the base, but any vegetable can be used in this recipe, such as romaine lettuce, arugula, spinach (including baby spinach), or butter lettuce.
- sun dried tomatoes – you can do it yourself Homemade Sun Dried Tomatoesor buy them. Julienned (thinly sliced) tomatoes are best for this recipe. If they are packed in oil, drain them before using. Chop up any store-bought tomatoes that haven’t been julienned.
- goat cheese – Feta would be a good substitute if you don’t like goat cheese crumbles.
- Walnut – You can also use sliced almonds, pine nuts, almonds, or pecans, but I prefer goat cheese walnut salad.If you are allergic to nuts, you can omit them entirely, or use sunflower seeds or Roasted Chickpeas austerity.
- avocado – To pick the perfect avocado, remove the stem tip. It should be soft on the outside and bright green on the inside — not brown.

How to Make Goat Cheese Salad

- Make the dressing. Mix all seasonings together food processor and process until smooth. on hold.
- Season the chicken. Pat the chicken breasts dry with paper towels. Season with salt and pepper.
- Cook the chicken. heat the olive oil large baking dish or frying pan over medium heat. Add chicken breasts and cook, turning once, until golden and cooked through. Transfer to a plate to rest.
Tip: Use a meat thermometer.
I recommend using meat thermometer to make sure the chicken is cooked through. The internal temperature should reach 165 degrees Fahrenheit.


- Assemble the goat cheese salad. Place spring mixture in a large salad bowl (or divide into 4 individual bowls). Top with cooked chicken, sun-dried tomatoes, goat cheese, walnuts, and sliced avocado.
- Drizzle with dressing. Pour dressing over salad. Toss to combine.


storage instructions
Store salad ingredients in individual airtight containers in the refrigerator for up to 4 days. If the salad has been mixed with the dressing, it will only last for 1 day.
Dressing will keep in a mason jar in the refrigerator for up to 1 week.it’s also great fish, shrimp, Steakand roasted vegetables. I like to make a double batch when I’m meal prepping to use throughout the week!
