These spinach pancakes are perfect for kids and so delicious! They're made with hidden spinach and gluten-free flour, making them healthier (but no one will know)! They are fluffy and cook to perfection!

St. Patrick's Day is coming, and whether you have Irish roots or not, everything matters green. I love celebrating holidays big and small, and adding these healthy spinach pancakes to your breakfast rotation this time of year is a fun way to celebrate!

Can almond flour be used instead of almond flour?

Yes. Almond flour is made from peeled almonds that have been peeled and ground more finely than almond flour, which usually still contains the skin and is ground more coarsely.

Is there anything I can use instead of almond flour?

We know that many people are allergic to almonds. Unfortunately, almond flour cannot be easily replaced with something else.

If you can tolerate oats, we've successfully swapped out oat flour for almond flour in a few recipes, so you can give it a try here, although we haven't tried it ourselves yet.

Can I substitute anything with tapioca flour?

Arrowroot can be used, but tapioca is cheap and my preference.

Can I use this mixture to make waffles?

Absolutely! It's completely interchangeable for paleo pancakes and paleo waffles.

How to make green pancakes

  • Making these pancakes couldn't be easier: Add all ingredients to a blender and blend until smooth!
  • Then cook in your favorite skillet, making sure to add the chocolate chips to the batter while cooking.
  • Warm pancakes with maple syrup if desired!

Can I make these ahead of time on a busy morning?

Because there is spinach in the batter, the pancakes need to be cooked immediately. However, these pancakes freeze extremely well!

Let them cool completely at room temperature, then freeze on a parchment-lined baking sheet.

After freezing, you can put it into a bag or storage container to extend the storage time, about 1-2 months. You can heat it in a toaster or microwave until warmed through.

  • 4 Egg
  • 1/2 cup unsweetened applesauce
  • 1-2 cup fresh spinach
  • 1 cup Almond powder
  • 1 cup Tapioca flour
  • 1 teaspoon baking powder
  • pinch Salt
  • 1/3 cup Dark chocolate chips or add-ins of choice
  • Cream or ghee or oil for cooking
  • Place eggs, applesauce and fresh spinach in a blender. Stir until spinach is mostly pureed. Add almond flour, tapioca flour, baking powder and a pinch of salt. Stir until mixture comes together, about 1 minute.

  • Heat cream in a non-stick skillet over medium heat. When hot add 1/4 cup of batter, or add-ins if using for pancake batter.

  • Cook until golden brown, about 3 minutes, then flip and continue cooking until pancakes are cooked through, about 2 minutes more.

  • Continue with remaining batter.

  • Serve pancakes with desired ingredients and serve immediately.

Large batch pancake mix:

  1. In a large storage container, combine 4 cups almond flour, 4 cups tapioca flour, 2 tablespoons baking powder, and a large pinch of salt.
  2. When ready to use, scoop 1 cup of mixture into a mixing bowl and add 2 eggs, vanilla extract, and 1/4 cup applesauce.
  3. Cook and enjoy!
