That’s one of the reasons I’m so excited to make these Jicama Fries in the Air Fryer. I can’t believe they are so crispy – perfect healthy appetizers, side dishor snack!

What is jicama?

Jicama is a root vegetable native to Mexico and commonly found in Central America, with brown skin and white flesh. Sometimes it’s called Mexican yam beans or Mexican potatoes. It’s a climber, technically part of the pea family, but the part we eat is the root. Jicama shares many similarities with potatoes, but with an inedible skin, a sweeter flavor (like a hybrid of potato, water chestnut, and apple), and far fewer carbohydrates.

How to Prepare Jicama Fries

  1. cut. First peel the jicama, then use a sharp knife to cut into jicama fries (french fries). A good size is 3 to 4 inches long and about 1/3 to 1/2 inch thick.
  2. boil. Cook the fries in boiling water until very soft, like boiled potatoes. Color and texture will change.
  3. dry. Once the jicama fries are soft, drain and pat dry with paper towels. Now you can air fry or bake them to get them browned and crispy!

  1. season. In a large bowl, drizzle the jicama with olive oil and season with garlic powder, cumin, and sea salt until evenly coated. (If using any of the above seasonings, you can add them here.)
  2. Air fryer. Place the jicama fries in a single layer in the air fryer basket, spreading out so they don’t touch each other. (You’ll need to cook in batches.) Air fry until golden brown.

Can you make baked jicama fries in the oven?

Yes, you can bake low carb jicama in a 425°F oven for about 30-40 minutes after the boiling step.

Do jicama fries taste like potatoes?

If you do it right, jicama fries taste very similar to regular fries. There are two key differences to keep in mind:

  1. Jicama won’t cook well if you grill it raw or deep fry it. So it’s best to boil it first to make it softer and closer to the texture of a potato before baking (or frying!).
  2. Jicama has a slightly sweet taste. It tastes sweeter than potatoes, and fries can be a little odd. The key is to use enough salt and other seasonings!

  • Shop: Store cooked jicama fries in the refrigerator for 3-4 days.
  • Meal preparation: Boil, dry, and store jicama fries in the refrigerator until ready to bake or fry.
  • Reheat: Reheat leftovers in the air fryer for best results, or bake in a 400°F oven.
  • freeze: Freeze the fries in a single layer on a parchment-lined baking sheet until set, then transfer to a ziplock bag, remove excess air, and place back in the freezer.
  • Cooking from freezer: Air fry until hot and crispy. You can do the same thing in a regular oven, but an air fryer will do a better job of removing excess moisture and making them crispy.

To make tomato chili cheese fries, all you need to do is add some paprika, cheese, and scallions to your jicama fries:
