This is the first complete roasted ham on LCK. If I say so myself, the wait is totally worth it. This maple-glazed ham came off the bones, tender and smooth, coated with a sweet, spicy and salty maple glaze.

  • Ham: I use 10 pounds of naturally cured spiral sliced ​​bone-in ham. Remember, if you use a different size, the cooking time will change.
  • Maple syrup and coconut sugar: Provides a sweet caramel base to the maple glaze. Be sure to use real maple syrup, not pancake syrup!
  • Dijon mustard: Thicken the glaze and add a spicy flavor.
  • seasoning: I use a simple sweet and spicy mix of cinnamon, chili, ginger and cloves.

How to buy ham

In this recipe, we are talking about fully cooked ham, which is usually labeled “ready to eat”.We are usually at Whole Foods or Butcher box.

First, we recommend buying ham that does not contain antibiotics and nitrates. After that, you can choose to have bones, half bones or bones removed. We used spiral sliced ​​ham with bone, firstly because we wanted to be able to use ham bones in other recipes, and also because spiral sliced ​​ham is easy to eat because it has been cut in half!

How to make maple-glazed ham

Since the ham is fully cooked, the only thing you have to do is to make the glaze and “heat” it!

  • Boiled ham: Leave the ham at room temperature for an hour, then place it on an oven-safe metal rack in the baking tray. Scratch it with a knife, then cover with foil and bake at 325ºF for 2.5 hours.
  • Making the glaze: In a small pot, combine maple syrup, coconut sugar, Dijon, and spices. Bring to a boil, then set aside.
  • Glaze the ham: Remove the ham from the oven and remove the foil from the ham. Brush the glaze and cook in the oven for another 30 minutes.

How long does it take to cook a ham

The rule of thumb for cooking bone-in ham is to plan 18-20 minutes per pound of meat. If you use boneless ham, plan close to 10-15 minutes per pound.

If you use 10 pounds of ham like me, you will have to bake a total of 3 hours. I bake my first 2.5 hours, covered with foil and unglazed, to give it time to cook and become nice and tender. After that, I removed the aluminum foil, brushed it with maple glaze, and cooked it for another 30 minutes!

Remember, if you use different sizes of ham, the cooking time will change.As always, the best way to check if meat is cooked is to use a meat thermometer or Thermapen MK4. After the initial cooking time, the temperature should be 120ºF. After adding the glaze and cooking, the internal temperature of the ham should be at least 140ºF. Once it reaches 140ºF, you can start!

Should you cover the baked ham or not?

In the first 2½ hours, you will cover it and bake, then uncover it and cook for another 30 minutes!

Covering it during most of the cooking time will help keep it moist, and leaving it exposed for the last 30 minutes will give the skin a golden brown!

  • Score the ham. Cut the surface of the ham so that the glaze has more chances to actually penetrate into the meat.
  • Cook the fat side up. The fat is on the top, and when the ham is cooked and spread, water drops will flow down the ham.
  • Cover with foil. This will retain moisture when the ham is cooking and make it softer. If you don’t cover it, the ham will dry out before it is fully cooked.
  • Check the internal temperature. This is the best way to check whether the ham is cooked. The minimum internal temperature should be 140ºF!
  • Let it sit. After cooking, let the ham sit for 20 minutes before slicing so that the moisture can settle and redistribute.

The remaining baked ham will be stored in an airtight container in the refrigerator for 3-4 days, or in the refrigerator for up to 3 months.

  1. Before starting, let the ham sit at room temperature for about 1 hour.
  2. Preheat the oven to 325ºF and place the oven safety rack in the baking tray. Put enough water in the baking pan about 1/4 inch.
  3. Place the ham on the shelf with the fat side up. Slash the ham diagonally with a sharp knife and cover it tightly with foil. Place in the oven and bake for 2-½ hours, or until the internal temperature of the ham reaches about 120ºF.
  4. Make the glaze at the same time: add maple syrup, coconut sugar, Dijon mustard and spices to a pot and bring to a boil. Set aside.
  5. Remove the ham from the oven and remove the foil. Brush the top of the ham with maple syrup glaze, then return to the oven for about 30 minutes, or until the internal temperature of the ham reaches at least 140 degrees Fahrenheit.
  6. When the ham reaches the correct temperature, remove it from the oven and glaze the ham again. Let stand for 20 minutes before slicing and serving.

  • Buy good quality ham!
  • If you have different sizes of ham, just change the cooking time. You want to cook ham for about 18-20 minutes per pound.
