(No need to rinse them – just drain and pat dry), but you can rinse if you want. ) However, if you prefer to use dried chickpeas, soak them in water for 12 hours, then drain, rinse, and boil the stove for 90 minutes to 2 hours before using in this recipe.
- Avocado Oil – Crispy roasted chickpea recipe. You can also use extra virgin olive oil or any heat-resistant cooking oil you like.

Tips for the Best Roasted Chickpeas
- Dry them. Make sure to drain the chickpeas thoroughly and pat dry with paper towels before seasoning. Otherwise, their moisture will create steam in the oven without the crisping effect.
- Give them breathing room. It is important that your chickpeas are spread out in a single layer on the pan with some space between them. They need air movement to crisp up!
- Skip the parchment. I recommend roasting the chickpeas directly on the baking sheet as they will be more crispy that way. Foil also works. They can still be crisped with parchment paper, but less well and may take longer.
How to store roasted chickpeas?
Although best eaten fresh, you can store this roasted chickpea recipe at room temperature up to 5 days or in the refrigerator up to 10 days.
- Reheat: You can serve roasted chickpeas at room temperature or warm them up in the oven until they regain some crispy texture.
- freeze: Dry-roasted chickpeas will not retain their crispness after freezing, but are safe to freeze. Place on a parchment-lined baking sheet and freeze until set, then transfer to a freezer-safe container for long-term storage. Thaw overnight, then reheat in the oven to restore some (but not all) of the crispy texture before serving.

In a large bowl, toss chickpeas with avocado oil, adobo puree, ground cumin, and sea salt. (Jalapeño sauce and cumin are optional. If you can only find whole jalapeños in adobo and want to use them, just blend them in a blender or food processor.)
