While this salmon marinade is my favorite, you can use it for other proteins as well.It goes well with almost any kind of flaked fish, or you can even use it Grilled Pork Chops instead of Pork Chops Marinade I usually use it.

Salmon Marinade Ingredients

- olive oil – I chose extra virgin olive oil for the flavor, but avocado oil would work here too.
- lemon juice – The acid helps tenderize the salmon, plus the citrus flavor pairs well with the fish. If you don’t have lemon juice, you could try lime juice, or even orange juice if you like extra sweetness.
- Maple sugar – I use Wholesome Yum Zero Sugar Maple Syrup, naturally sweetened, sugar-free, and tastes just like real maple syrup. You can also use regular maple syrup if that suits you, or substitute 2 tablespoons of honey.
- fresh herbs – I use dill and parsley because those summer herbs work great on fish. Look for bright leafy herbs that won’t turn yellow. Dark green has the most flavor. You can use dried herbs (1/3 the amount of fresh) in a pinch, but fresh herbs work best for salmon.
- garlic – Use fresh minced garlic, or canned to save a few minutes.
- sea ​​salt and black pepper – The salt helps the salmon marinade penetrate and soften into the fish. Black pepper adds a little kick, but this recipe isn’t spicy. If you like heat, you can add 1/2 teaspoon crushed red pepper flakes to the marinade.
Variations: Make a Lemon Garlic or Asian Salmon Marinade!
I think this version with maple syrup is one of the best salmon marinades, but you can also try these variations:
- Asian – Omit the fresh herbs and maple syrup. Add 3 tablespoons coconut aminos or low-sodium soy sauce, and 1/2 teaspoon minced ginger and chili powder.
- lemon garlic – Omit the maple syrup, increase the lemon juice to 1/3 cup, and add 2-3 cloves of garlic. You can also grate and add a teaspoon or two of fresh lemon zest.

How long to marinate salmon?
Thirty minutes is ideal for marinating salmon, but you can go as long as 60 minutes. The marinade will start to break down the fish, and if left longer than an hour in the marinade, it will turn into ceviche and start to get mushy.
Can you freeze salmon with a marinade?
No, do not freeze salmon in a marinade as it will exceed the 60 minute time limit. Acid will break down salmon, even if it’s frozen.
