One of my favorite salads over the years has been the Costco Kale Salad Kit. You know the one I’m talking about – tons of kale, tons of super greens, dried cranberries, pumpkin seeds, and a sweet poppy seed dressing. I often add smoked salmon to make it a complete meal. One day I checked the ingredients list and saw that the dressing contained sugar, soybean or canola oil, and preservatives – so I figured out my own way of using only the veggies in the mix.this Smoked Salmon Salad Healthy, as easy as a kit, and perfect for an easy lunch!
This salad is a great way to recover after a big meal, like mine detox soup. Plus, it’s just as easy to store as my favorite Layered Saladso I always have a healthy option on hand – and it’s coming soon!

Ingredients and Substitutes

salad:
- Sweet Kale Salad Mix – I like to buy the sweet kale salad kit and omit the add-ins that come with it, but you can use any salad mix you like, or just use one leafy green like baby spinach, arugula, or kale. You can also make your own by combining kale, green cabbage, red cabbage, broccoli, Brussels sprouts, and endive.
- smoked salmon – buy cold-smoked salmon, or use Homemade Smoked Salmon.
- blueberry – Brings sweetness and antioxidants.other berries, including Homemade Unsweetened Dried CranberriesWill taste delicious here.
- pistachio – Adds a subtle crunch. You can also use walnuts or pecans, or sunflower or pumpkin seeds for a nut-free option.
- avocado – Cut into bite-sized pieces.
Smoked Salmon Salad Dressing:
- mayonnaise – I do it myself Avocado Oil Homemade Mayonnaise, but you can also use your favorite store-bought version. The dressing doesn’t contain any salt, as I’ve found that mayonnaise provides enough salt, but you can add to taste if desired.
- olive oil – This recipe uses extra virgin olive oil, but you can use any vegetable or salad oil you like.
- lemon juice – Squeeze fresh lemon juice for best flavor, or use bottled For convenience. Apple cider vinegar or white vinegar are good substitutes if needed. You can also add a teaspoon of Dijon mustard to the dressing if you like.
- garlic powder – Use a good quality garlic powder for the best flavor.
- sugar – Naturally sweetened.I usually use unsweetened honey, but it also works fine.You can also use powdered sugar if your lifestyle allows it, or any powdered sugar substitute you like it. Granular sweeteners can be a little grainy in the dressing, so keep that in mind.
- poppy seeds – optional, but they add a nice and nutty flavor to the dressing. If you omit them, I recommend adding at least black pepper.
Variations: Add other remixes!
Add other mixins of your choice, such as the remaining Roasted sweet potatodiced cucumber or tomato, chopped cherries, green or red onion, hard boiled eggscrumbled goat cheese or fresh herbs such as fresh dill.

- Mixed Smoked Salmon Salad ingredients. Place salad mix, smoked salmon, and blueberries in a large bowl.
- Make the dressing. In a small bowl, whisk together mayonnaise, olive oil, lemon juice, honey, garlic powder, and poppy seeds until emulsified.

- Add nuts and avocado. Add the pistachios and diced avocado, and toss again.


storage instructions
Place the smoked salmon salad in an airtight container and store in the refrigerator. It will stay fresh for up to 3 days. If possible, avoid adding avocado and pistachios right before serving, as the avocado will brown and the nuts will lose their crunchy texture if stored with the sauce. If making the salad ahead of time, store the dressing separately.
