Chocolate Cherry Protein Muffins


chocolate and cherry is one of my favorite flavor combinations – and if you’re a fan too, today’s muffin recipe is one you’ll love making again and again!

They have just the right amount of sweetness and an extra dose of protein to fuel your body for whatever activity you're doing.

cherry Contains Vitamin C (great for your immune system) (1), potassium (supports important functions such as your ability to contract muscles) (2) and fiber (helps maintain digestive health) (3).

Chocolate Cherry Protein Muffins

yield: 12 waffles

You will need: Mixing bowl, measuring cup and spoon, wooden spoon, muffin tin, muffin liners (optional)

key: T = tablespoon; teaspoon = teaspoon

raw material:

  • Serves 4 (136 g) I ❤ chocolate protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 3/4 cup almond flour
  • 1/4 cup cocoa powder
  • 3 eggs
  • 1/4 cup coconut oil, softened or melted
  • 2 T maple syrup
  • 1/2 cup unsweetened almond milk (or non-dairy milk of choice)
  • 1/2 cup pitted cherries, fresh or frozen (halve)

route:

  1. Preheat oven to 375 F. Line a 12-piece muffin pan with muffin papers or lightly spray with oil.
  2. In a large bowl, combine protein powder, cocoa powder, baking powder, salt, and almond flour.
  3. In another bowl, combine eggs, coconut oil, maple syrup, and almond milk.
  4. Add the wet ingredients to the flour mixture and stir to combine. Then stir in the cherries.
  5. Fill muffin cups (2/3 full) with batter and bake for 15-17 minutes.
  6. Remove from oven and allow to cool for 5 minutes, then remove muffins from pan and transfer to cooling rack.
