These Oven Grilled Beef Tacos It’s a quick and easy dinner that’s perfect for a crowd! Tacos are topped with juicy ground beef, refried beans and cheese, baked until melted in the center and crispy on the outside, then topped with your favorite taco toppings.

Easy Ground Beef Tacos Recipe

I don’t know about you, but Taco Tuesday is one of my favorite days of the week. I love enjoying a different taco variation every week and this recipe is in my top five favorites.

This oven roasted beef tacos recipe is a new favorite. This is a classic beef taco made even easier by baking it in the oven. This is the perfect way to whip up a stack of tortillas at once for a hearty, delicious, less messy, family-friendly dinner—one that the kids can stick to with no problem!

Make a big batch of these for dinner, or prepare them ahead of time and store them in the refrigerator!

Why put tortilla shells in the oven?

I love making quesadillas in the oven for a few reasons:

  1. Let go: You assemble all the tortillas and then Then Bake them. Then they were all ready to go at the same time.
  2. Serving people: Spread as many tortillas as you can on a baking sheet to create a delicious treat in a handful at a time!
  3. Perfect texture: Oven baked tortillas are out so Perfect Crispy…and they don't fall apart when you try to eat them!

Required raw materials

  • Ground beef: This recipe calls for 1 pound of ground beef.
  • Taco Seasoning: You can use store-bought taco seasoning (my favorite is Siete Foods), or you can make a batch of mine Homemade Tacos.
  • Salsa: Any salsa you choose to add Ton The flavor and moisture of the taco meat.Use your favorite store-bought salsa or make Homemade Salsa instead.
  • Green chilli: Green chilies are an optional addition, but if you like extra heat, they really kick the spiciness up a notch.
  • corn cake: I prefer using corn tortillas, but you can use flour tortillas if you prefer! Keep in mind that the texture will vary slightly. I used 6-inch corn in this recipe.
  • Cheddar cheese: For the best texture, use fresh shredded cheddar cheese. If you are short on time, you can use the pre-crushing method. *Use this to make it dairy free cheese sauce.
  • Refried beans: Our favorite store-bought variety is Siete Foods, but I do love making my own Homemade refried beans.
  • Cooking spray: Coating the tortillas with cooking spray helps them get that delicious crispy texture.
  • Ingredients: The options are endless; my favorites are shredded lettuce, shredded scallions, diced tomatoes, and guacamole.

What should I put in a tortilla?

There is one Ton You can put delicious toppings into (or on top of) your tortillas! Here are some of my favorites, but feel free to customize anything that sounds good, the options are endless.

  • Chives
  • shredded lettuce
  • diced tomatoes
  • sour cream
  • avocado
  • Salsa
  • Dice white onion
  • hot sauce
  • fresh cilantro
  • Avocado slices
  • black pepper
  • lime wedge

Top tip!

Once the tortillas are baked, I like to gently open each tortilla and place a few toppings inside to make it easier to eat.

How to Make Oven Roasted Beef Tacos

This ground beef taco recipe requires minimal prep! Here’s a quick breakdown of the recipe.

  1. Prepare beef: In a large skillet, combine ground beef and taco seasoning over medium heat. Mix and cook until the meat is browned, slicing into pieces as you go. Once the beef is well browned, add the salsa and optional green chiles and stir well.
  2. Fill the tortillas: On a baking sheet lined with parchment paper, place tortillas of your choice. Spray both sides with cooking spray and top tortillas with 1/4-1/3 cup ground beef. Add a tablespoon or two of refried beans and sprinkle with cheese.
  3. Bake and fold: Bake the open tortillas for 10 minutes. Once the cheese is melted, fold one side of each tortilla over to form a taco shape. Flatten with a spatula and bake for an additional 5-10 minutes or until crispy.

Not crispy enough? Grill the tortillas on high for about 90 seconds or until crispy to your liking. Be sure to watch carefully to avoid burns!

I love using ground beef to keep this beef taco recipe simple! It's a classic taco meat that's quick and easy to cook, simply seasoned, and affordable.

How to Cook Ground Beef for Tacos

The easiest way to cook ground beef for tacos is to add taco seasoning and salsa to a skillet. The finished taco meat is juicy and flavorful with minimal effort.

How long does it take to heat tortillas in the oven?

It depends on how crispy you like them! I usually bake them unfolded for 10 minutes, then folded and baked for another 5-10 minutes.

Feel free to increase or decrease the baking time to get the perfect taco texture. Be sure to check the tortillas regularly so you can best gauge timing and crispness.

If you want to fold the tortillas before baking, Warm the tortillas in the microwave first so they don't break.

Tips and Notes

  • Line a baking sheet. I recommend lining a baking sheet with parchment paper before baking the tortillas. This prevents anything from sticking to the pan and makes cleanup very easy.
  • Adjust tortilla size. I used 6-inch tortillas for this recipe. If you use a larger one, be sure to adjust the filling accordingly.
  • Spray tortillas with cooking spray. This helps the tortillas get nice and crispy!

How to store

Leftover ground beef tacos can be stored in an airtight container in the refrigerator for up to 4 days, or in the freezer for up to 3 months.

To freeze them, let them cool completely, then flash freeze on a baking sheet until hardened. Once the tortillas are set, you can transfer them to a freezer-safe container or ziplock bag.

When you're ready to eat again, simply thaw them in the refrigerator overnight and reheat as needed.

How to reheat

To reheat tortillas, you have a few different options:

  • oven: Place the tortillas back on the lined baking sheet and bake at 350°F until warmed through and crispy again.
  • Air fryer: Place tortillas in a single layer in air fryer basket and air fry at 350°F until hot and crispy.
  • Frying pan: Place tortillas on skillet and heat over medium heat until heated through. Be sure to flip each tortilla halfway to re-crisp both sides.

  • 1-2 cup shredded cheddar cheese
  • 1 cup refried beans Siete Foods is our favorite store-bought option, or get mine Easy Homemade Refried Beans
  • Avocado oil spray
  • Ingredients Onions, shredded lettuce, diced tomatoes, sour cream, avocado, Salsachopped white onions, hot sauce, cilantro, avocado slices, jalapenos, lime wedges, No diary cheese
  • Preheat oven to 375°F and line a rimmed baking sheet with parchment paper.

  • In a large skillet over medium heat, add beef and tortilla seasoning and stir until beef is browned. Make sure to mince and break up the meat so there are no big chunks. Once browned, add the salsa (green chiles are optional during this step as well) and mix. Set aside.

  • Optional: Prepare refried beans as directed, if using.

  • On a lined baking sheet, add the tortillas and spray both sides of the tortillas with oil.

  • Spoon about 1/4/-1/3 cup of the ground beef mixture onto one side of each tortilla, add a tablespoon or two of refried beans, and top with cheese.

  • Bake for 10 minutes, unfold.

  • Fold the other side, flatten with a spatula, and bake the tortilla for an additional 5-10 minutes, until it's as crispy as you like.

  • Not crispy enough? Grill over high heat for about 90 seconds (watch closely to avoid burning) until tortillas are golden brown.

  • Serve with your favorite toppings! I like to gently open mine, add more toppings inside) and enjoy!
